one thing you will learn about me, is that i love love love to cook & bake.
i love to cook so much that i cook made-from-scratch meals for dave and i twice a day.
and left overs are never an option.
(what a lucky man, right?
)
i have always cooked from scratch, we have never bought boxed food.
(with the exception of eggo waffles and spongebob shaped kraft mac & cheese.)

if you have ever been to our house, you know that you aren’t going to leave on an empty stomach.
in fact, if you come over not hungry,
you can still expect to leave with food in your belly & a fresh out of the oven cookie in your hand
and not even know how it got there.
it’s just how it is at our house.
(so note to yourself: if you are ever planning on coming over…come hungry.
ask the college age kids at our church…i pretty much force them to eat when they are over.)
at the beginning of this month, my husband decided he wanted to get on a diet and lose some weight.
i didn’t think he needed to but i support what he wants to do.
although i love to cook, veggies were never really part of our daily intake…
one time my mom and dad tried to make me eat a beet…..it barely touched my lips before i ran to the bathroom.
needless to say, me and veggies have never had a very close relationship….
…until now!

if you look into our (teeny tiny) fridge, it is filled with veggies and fruits.
and we love them!!!

dave’s new diet requires a lot of self control, smaller meat portions, 4 servings of veggies and 2 servings of fruit a day.
so far he has lost 15.5 lbs since the beginning of the month and still losing! i am so proud of him.:-)
there have been so many great things about dave’s diet for both of us!
we become full on smaller and healthier portions of food,
our bodies feel better and more energized,
we drink waaaay more water than we used to,
our grocery bill has been cut in half and we are eating fresh & better foods,
and the best part is that we have both been trained to crave veggies and fruit
instead of carbs and chocolate.
though i am not losing or trying to loose any weight (i don’t need to!),
my body just feels healthier and i’ve been loving it!

with love,
manda
